Making a professional French fries production line requires attention and skill, both of which are traits we value highly at Marcelissen and on which we continue to develop. We therefore understand that a good product starts with developing a good production process. The customer’s wishes play a vital role in this process. At Marcelissen we therefore also attach great value to co-engineering.
When making a chips production line, we always take into account the fact that different potato specialties require a specific processing process. Whether it’s fresh fries, slices or cubes, we think along with you and find the right solution.

As the name suggests, a production line for French fries consists of several machines, each taking on its own role in the production process. You can also take a look at our complete overview of machines. A number of links within the production line will be discussed in detail.
Image 2: A storage bunker for the storage of potatoes.
To start with, to store all potatoes you need a so-called storage bunker, consisting of different sizes and shapes. These can also vary greatly in capacity, from 500 kg to as much as 10,000 kg. There are also bunker variants with an outfeed conveyor. With these types, the speed of the belt can be adjusted with a frequency converter. Image 3: Drum Roller Peeler – SKR
For the process of peeling potatoes, it is very important that there is a regular supply of potatoes during the peeling process, so that the potato can be peeled evenly. However, the transit time can be adjusted by means of a transport screw. The speed of the rollers, the drum and the screw can all be adjusted as well. The capacity is up to a maximum of 6,000 kg/hour. See the table below for technical specifications of the Drum Roller Peeler.

Image 4: Hydrocutter – SH
For cutting perfectly straight chips and wedges, our customers use a hydro cutting system by Marcelissen. With a capacity of up to 15,000 kg/hour, the Hydro Cutter – SH is ideal for our French fries production line.
The machine consists of a water collection tank, a centrifugal pump, a venturi, a knife block, a decelerator and a discharge belt.
The washed potatoes are collected in the collection tank. From here they are sucked up by a special centrifugal pump without damaging the potatoes. The potatoes are then transported to the venturi, where the speed is accelerated, behind the venturi tube, the knife block cuts the potato into the desired shape; fries or wedges.

Image 5: Sliver Remover SR2
After cutting fresh fries, cubes or slices, there are inevitably short and thin pieces in the product stream, after all potatoes are not squared or rectangular. In order to realise a high quality end product, these short and narrow pieces have to be sorted out, we do this by means of our Sliver Removers.
This machine is specially constructed to separate too small product particles and/or waste from sliced and whole products. The main advantage of this sorter is that the roll opening during the production process can be easily, quickly and precisely adjusted from 3 to 23 mm or 4 to 24 mm.
The new generation Sliver Removers are very easy to maintain, the rollers can be adjusted during the production process and no water is needed for cooling and lubricating the bearings. When processing potato products, there is always the possibility to add a spray tube with which the released starch can be rinsed away.
All rollers have the same rotation direction and are equipped with spirals. This creates a good product distribution, which is very important in achieving a good sorting quality. The product to be sorted moves across the rollers with the direction of rotation of the rollers, whereby breakage is excluded.
The waste can be disposed of underneath the machine. A spray tube is mounted above the rollers for the removal of any sticking parts.
The roll opening of Sliver Removers can be adjusted up to a maximum opening of 20 mm between the rollers. Furthermore, nowadays we have a split-sizer where on one machine two halves can be adjusted separately, this gives 3 sorting possibilities.
The plastic rollers are available in cream and blue and always come with an FDA certificate. Optionally, the Sliver Removers can also be equipped with stainless steel rollers.
